Butternut Squash Pear Soup

This soup is one of my favorites that I've ever made. It's hardy, full of fall flavor and just a tad sweet. The ginger and sage pair so incredibly well with butternut squash and the pear is just a perfect lightly sweet flavor that doesn't overpower.
Ingredients:
2 lbs. diced Butternut squash
1 lb. chopped pears
3-4 cups vegetable broth
1 large yellow onion
1 cup milk or cream
salt and pepper
2 tsp. sage
1 tsp. cumin
2 tsp. ginger powder
1 tbsp. garlic powder

Sautee butternut squash and onions in butter in a large pot over medium-high heat until softened. Add spices to squash and onion mixture as you sautee.

Once the onions and squash are somewhat soft, add in vegetable broth. Simmer for about 20 minutes on medium-low. Add more spices at this point if you want tons of flavor!

Add pears, simmer another 10 minutes.

Remove from heat, place in a blender or food processor and blend until smooth.

Put back on medium-low heat and stir in milk or cream. Cook 3-5 more minutes.

Let cool and enjoy!
