This pear jam is easy to make and can. It has a light flavor and not overly sweet. There is no need to add any extra flavoring like vanilla, as the pear is such a light taste that it may be dominated by other flavors.

Ingredients:

  • 4 pounds pears, chopped and skinned

  • 2 cups cane sugar

  • Lemon juice optional to add pectin and prevent oxidizing

  • Mix chopped pears with sugar and lemon juice, cover and refridgerate 12 hours

  • Add to pot, bring to a boil

  • Stir, lower heat to medium high and cook 10-15 minutes or until pears reach gel stage, stirring occasionally

  • Add to sterilized canning jars and water bath can, let cool on counter overnight
