
Mini Garden Quiches
These crustless, muffin-sized little quiches are perfect for a healthy breakfast on the go. Easy and quick to. make, packed with flavor and nutrients, one of these can sustain me for hours on the job. This recipe makes 6 muffin-sized quiches, takes about 10 minutes to prep and 35-40 minutes to bake.
Ingredients:

4 eggs

1 cup whole milk

1/2 cup shredded cheddar cheese

1/4 cup shredded parmesan
-
1/2 cup chopped fresh spinach
-
1/4 cup chopped bell pepper
-
1/4 cup chopped yellow onion
-
1/2 tsp paprika
-
1 tsp garlic powder
-
Dash of salt and pepper

Avocado or other cooking oil


Directions:

Combine beaten eggs, milk, cheese, fresh spinach, salt and pepper and garlic powder in a bowl.

Preheat oven to 350

Sautee bell pepper and onions in oiled pan, sprinkling in paprika. Sautee 2-3 minutes or until tender.

Add sauteed bell pepper and onion to egg mixture.

Pour mixture into a greased muffin tin, leaving about 1/4 inch at the top (quiches will rise and then shrink back down during baking)

Bake at 350 for 35-40 minutes, or until a toothpick comes out dry when you poke into the quiche.

Allow to cool before removing from the tin.

Easily reheat in the microwave or toaster for your breakfast on the go!
